El Guachipilin (Washed) – Honduras

Adelmo Ramirez remembers the year 1970 vividly as the year that changed the direction of his life. This was the year that, due to his fathers absence, he took over operations on the family farm, El Guachipilin, meaning it was now his responsibility to maintain and harvest all the coffee on the farm.

Now, through Adelmo’s dedication, El Guachipilin spans over 2 hectares in the Ocotopeque region of Honduras and is covered in Parainema coffee plants. The farm is unique in that it is covered in vegetation and Inga trees which give the farm roughly 50% shade coverage, making it look more like a forest than a farm. The additional shade slows down the maturing of coffee cherries, creating a cup profile with more complexity and a characteristic sweetness. In order to improve production, Adelmo underwent training to be able to process washed or natural coffees at the farm instead of sending it to a mill, meaning the whole process is done right there at the farm.

We were lucky enough to be able to travel to Honduras where this coffee stood out to us on the cupping table for its complexity, vibrant acidity, and rich sweetness. We hope you enjoy!
