This is our second year featuring coffee from Rodrigo's farm, Laderas Del Tapias - and we're stoked! He delivered once again with a beautifully complex and clean lot of honey processed Catiope varietal.

Expect rounded tropical fruit sweetness and refreshingly crisp, apple-y acidity and brightness. Super satisfying and sophisticated!

This coffee comes to us from Laderas del Tapias, a farm located on the lush hills surrounding the stunning Tapias river for which it is named after (the name translates to Hillside of the Tapias). The current owners took over in the ‘80s and the farm is currently managed by Rodrigo Alberto Pelaez, who has been in charge for 25 years. In 2014 Rodrigo decided to focus the farm's effort on growing specialty coffee and, with the ideal climate and rich volcanic soil, the farm has had great success producing incredible lots.

Laderas del Tapias covers 106.4 hectares in the Caldas region, blending four farms—Buenos Aires, Puerto Rico, La Graciela, and Villa Inés—into a unique part of the UNESCO-recognized Coffee Cultural Landscape of Colombia. Nearly 25% of the farmland is dedicated to forest preservation to be able to preserve the distinct microclimate of the area.

This is a beautiful example of specialty Colombian coffee with meticulous processing to provide clarity and complexity that highlights the terroir. We hope you enjoy!

- Start timer, bloom to 50g
- At 0:45: pour to 150g
- At 1:15: pour to 240g
- Drawdown finishes at 2:00-2:15
