We are kicking off the new year with a spectacular new release from Ethiopia. This coffee comes to us from the Gigesa washing station, located in the town of Gigesa, in the Guji region of Ethiopia. The washing station collects cherries from more than 500 coffee growers in the area and processes them as Washed or Natural depending on the lot. Since all of the farms are above 1,800 MASL the washing station is able to produce some of the highest quality and delicious coffees.

This coffee was processed naturally, meaning that, after being floated to remove defects, the coffee was spread out on raised beds to dry in-cherry for 15-18 days. The natural process tends to accentuate sweetness and texture while highlighting fruit notes. We’ve become familiar with the region for creating cups with excellent florals, dynamic acidity, and clarity. This coffee has it all, and we are super excited to be sharing it with you!
