New this month, we’re excited to launch an incredibly wild coffee produced by Natalia Brito. Using a natural barrel fermentation, Fazenda Jaguara is a truly unique and expressive coffee we’re proud to share with you.

Look forward to an explosively complex and rich cup profile in this lot from Finca Jaguar. We found fresh tropical fruit sweetness like papaya and rambutan, tangy mandarin acidity and light confectionery notes like toffee and candied hazelnuts.

Fazenda Jaguara is a newer farm, covering 90-hectares of land, and nestled into the Campo des Vertentes region of Brazil. They specialize in natural and experimental processing which result in some of the highest quality coffees in Brazil, even scoring high marks in the Brazil Cup of Excellence competition. The farm first began in 2001 when Antonio Wander, along with two friends, all agronomists and researchers, took the leap into coffee production. But it was 12 years later, in 2013, when the farm began taking huge strides in innovation and sustainability under the new control of Antonio Wander’s son, André Luiz. 

With André at the reins, the farm has been implementing numerous projects focused on quality and sustainability, maximizing the utilization of natural resources. Their innovation comes from their experimental processing and fermentation methods, including anaerobic and aerobic processing, to create the highest quality coffee possible.

Nothing wrong with that, of course, but it's now the case that there are many outstanding and complex single origin coffees from Brazil - and this is one of them!

This lot from Finca Jaguar still has some of the typical qualities you find in Brazilian coffees (think roasted hazelnuts, chocolate, toffee etc.) but the care taken in the growing and processing of this coffee adds so much more on top! Big tropical fruits, citrus acidity and even some florals.
