Brazil is the largest coffee producing country in the world and farms range from tiny family operations to huge state-of-the-art industrial facilities. Within that we see more and more farms that grow specialty grade coffee, focusing on quality and cup taste above quantity. This is exactly what the Faleiros family are doing. With over 100 years of history in coffee, the Faleiros family currently own and operate the Santa Monica farm, located in the Alta Mogiana region of Brazil. Sitting at over 1,200 MASL and featuring a temperate climate, the area is perfect for producing coffee, and the family feels blessed to have such a wonderful farm. The farm is part of a larger complex called the Eldarado Group; this group encompasses 11 farms with a total of over 5.5 million coffee trees.


For processing, the family invested in creating their own custom processing center named Via Umida, where they can customize their techniques to fit each coffee. This coffee begins with freshly picked coffee cherries being cleaned and separated by density before being moved to an electronic sorter that automatically removes defects or unripe cherries. The coffee is then moved to stainless steel tanks for fermentation, oxygen is removed and they are left to ferment under close monitoring. Accurate temperature and pressure are critical in this stage to creating a perfect coffee. Finally the coffee is removed and dried on hanging patios as a natural.


As the largest coffee producer, Brazil is also heavily invested in innovation and sustainability for coffee growing. The country has made countless advancements towards coffee cultivation, processing, and logistics. They provide sustainability and growing information to farms of all sizes to help with the quality and quantity of their production, ensuring that the whole country can continue producing exceptional coffees for years to come!

Brew Recipe

What You Need:

  • Hario Switch Immersion Dripper
  • 18g of Cosmic Candy coffee, ground to a medium consistency
  • 290g of water heated to 98°C

Instructions:

  1. Set the Hario Switch to the open position to allow water to flow through.
  2. Start the timer and bloom with 60g of water.
  3. At 30 seconds, add another 60g of water, bringing the total to 120g.
  4. At 1:20, close the dripper, then add water until the weight reaches 290g.
  5. At 1:45–1:50, open the dripper, allowing the coffee to flow through.
  6. The brew should finish around the 3:00 mark.
